  • 1 part baked foccacia loaf, cut in half lengthways

  • 2 tablespoons red pesto sauce

  • 200 gram (7 ounce) mozzarella cheese

  • 225 gram (8 ounce) cherry tomatoes, halved

  • 3 tablespoons Dried Basil

  • 2 tablespoons olive oil

  • 1 Preheat the oven to 180°C, 350°F, Gas Mark 4. Place the foccacia bread on a baking sheet and spread with the pesto sauce.
  • 2 Top with the remaining ingredients and drizzle with oil. bake for 15 minutes and serve.
