Savoury Cheese Sticks
Ingredients

50 gram (2 ounce) butter

50 gram (2 ounce) lard

225 gram (8 ounce) plain flour, sieved

100 gram (4 ounce) strong Cheddar cheese, grated finely

1/2 teaspoon Garlic Grinder

pinch Cayenne Chilli Pepper

1 medium egg, separated

Cold water for mixing

Instructions
- 1 Pre-heat the oven to 230°C, 450°F, Gas Mark 8.
- 2 Rub the fats into the flour until the mixture is crumbly. Stir in the cheese and Seasonings. Add the egg yolk and enough cold water to form a dough.
- 3 Roll out the cheese pastry. Cut into thin strips and place them on to a greased baking tray. Brush with egg white. Bake in the oven for 10 minutes.
- 4 Cheese sticks may be frozen for up to 6 months. Thaw them at room temperature, or heat them in a warm oven from frozen.
