  • 50 gram (2 ounce) butter

  • 50 gram (2 ounce) lard

  • 225 gram (8 ounce) plain flour, sieved

  • 100 gram (4 ounce) strong Cheddar cheese, grated finely

  • 1/2 teaspoon Garlic Grinder

  • pinch Cayenne Chilli Pepper

  • 1 medium egg, separated

  • Cold water for mixing

Instructions

  • 1 Pre-heat the oven to 230°C, 450°F, Gas Mark 8.
  • 2 Rub the fats into the flour until the mixture is crumbly. Stir in the cheese and Seasonings. Add the egg yolk and enough cold water to form a dough.
  • 3 Roll out the cheese pastry. Cut into thin strips and place them on to a greased baking tray. Brush with egg white. Bake in the oven for 10 minutes.
  • 4 Cheese sticks may be frozen for up to 6 months. Thaw them at room temperature, or heat them in a warm oven from frozen.
