Beef & Apricot Curry

2 tablespoons oil

450 gram (1 pound) stewing steak

1 medium onion, chopped

2 tablespoons Mild Curry Powder

450 millilitre (¾ pint) beef stock

2 tablespoons crunchy peanut butter

¼ teaspoon Sea Salt

175 gram (6 ounce) dried apricots, chopped

75 gram (3 ounce) creamed coconut, crumbled

Instructions
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
- 2 Heat the oil in a frying pan and fry the steak and onions for 2-3 minutes, until browned. Add the Curry Powder and fry for another minute, stirring. Stir in the stock, peanut butter and Salt. Bring to the boil then transfer to a casserole dish.
- 3 Cover and cook for 1½ hours, stirring in the apricots and creamed coconut 15 minutes before the end of cooking time.
- 4 Serve with boiled basmati rice, seasoned with Schwartz Pilau Rice Seasoning to make a great Indian meal.
