  • 1 tablespoons rapeseed oil

  • 1 large red onion, finely chopped

  • 2 medium carrots, finely chopped

  • 2 celery sticks, chopped

  • 450 gram (1 pound) extra lean beef mince

  • 1 teaspoon Minced Garlic

  • 400 gram tin chopped tomatoes

  • 2 tablespoons tomato purée

  • 1 medium courgette, chopped

  • 200 gram (7 ounce) mushroom, sliced

  • 1 teaspoon Oregano

  • 1 teaspoon Dried Basil

  • 2 tablespoons Worcester sauce

  • 250 gram (9 ounce) wholegrain spaghetti

  • 25 gram (1 ounce) Parmesan cheese, grated

  • Ground Black Pepper , to season

Instructions

  • 1 Heat oil in a large non-stick pan and sauté the onions, carrots and celery for 3-4 minutes.
  • 2 Stir in the minced beef and Garlic. Cook until browned, using a fork to break up the mince as it cooks.
  • 3 Add the remaining ingredients (except the spaghetti). Bring the sauce to the boil, then lower the heat and simmer gently for 20 minutes. Stirring occasionally.
  • 4 Meanwhile, cook the spaghetti according to the packet instructions, drain.
  • 5 Season Bolognese with Black Pepper to taste and serve on a bed of hot spaghetti. Sprinkle with grated Parmesan.
