In this recipe, chicken and chickpeas are combined in an aromatic Moroccan-spiced sauce to give a deliciously rich yet mild dish.
Ingredients
  • 1 tablespoons olive oil

  • 1 onion, sliced

  • 1 teaspoon Garlic Cooking Paste

  • 450 gram (1 pound) boneless, skinless chicken breasts, sliced

  • ½ teaspoon Turmeric Powder

  • 1 teaspoon Cinnamon Ground

  • 1 teaspoon Ground Coriander

  • 1 teaspoon Ground Cumin

  • 1 red pepper, diced

  • 400 gram (14 ounce) tin chickpeas, drained

  • 125 gram (5 ounce) fresh tomatoes

  • 2 tablespoons honey

  • 1 tablespoons Coriander Leaf

  • 3 tablespoons tomato purée

  • 200 millilitre (7 fluid ounce) chicken stock

Instructions

  • 1 Heat the olive oil over a medium heat and fry the onion and Easy Garlic for 3-4 minutes until softened.
  • 2 Add the chicken and fry for a further 4-5 minutes, until browned.
  • 3 Add the spices and cook for 30 seconds. Add the remaining ingredients and bring to a gentle simmer.
  • 4 Reduce the heat and simmer for 20 minutes, stirring occasionally, until the sauce has thickened.
