Cajun Chicken

1 tablespoons olive oil

1 onion, chopped

½ teaspoon Garlic Granules

1 teaspoon Dried Thyme

1 teaspoon Smoked Paprika

¼ teaspoon Ground Allspice

¼ teaspoon Hot Chilli Powder

1 green pepper, diced

450 gram (1 pound) boneless, skinless chicken breasts, sliced

400 gram tin chopped tomatoes

1 tablespoons tomato purée
-
150 millilitre (¼ pint) water

Sea Salt, to season

Instructions
- 1 Heat the olive oil and fry the onions for 3-4 minutes until soft.
- 2 Add the Garlic, herbs and spices and fry for 30 seconds.
- 3 Toss in the pepper and cook for 1-2 minutes.
- 4 Add the remaining ingredients and simmer for 15-20 minutes or until the chicken is cooked through. Season to taste. Serve with rice.
