  • 1 tablespoons oil

  • 450 gram (1 pound) boneless, skinless chicken breasts, cut into strips

  • 4 teaspoon Cajun Seasoning

  • 1 onion, sliced

  • 1 green pepper, sliced

  • 2 large carrots, cut into matchsticks

  • 1 tablespoons cornflour

  • 1 tablespoons tomato pureé

  • 200 millilitre (7 fluid ounce) chicken stock

  • 215 gram (7½ ounce) tin pineapple in juice, cut into chunks

Instructions

  • 1 Heat the oil in a large frying pan and fry the chicken, Cajun Seasoning and onion for 4-5 minutes until browned.
  • 2 Add the pepper and carrots and fry for 2-3 minutes. Blend the cornflour with the tomato pureé, chicken stock and 4 tbs pineapple juice.
  • 3 Add to the pan with the pineapple chunks and bring to the boil, stirring until thickened. Simmer gently for 1 minute.
