Cajun Chicken Stir Fry

1 tablespoons oil

450 gram (1 pound) boneless, skinless chicken breasts, cut into strips

4 teaspoon Cajun Seasoning

1 onion, sliced

1 green pepper, sliced

2 large carrots, cut into matchsticks

1 tablespoons cornflour

1 tablespoons tomato pureé

200 millilitre (7 fluid ounce) chicken stock

215 gram (7½ ounce) tin pineapple in juice, cut into chunks

Instructions
- 1 Heat the oil in a large frying pan and fry the chicken, Cajun Seasoning and onion for 4-5 minutes until browned.
- 2 Add the pepper and carrots and fry for 2-3 minutes. Blend the cornflour with the tomato pureé, chicken stock and 4 tbs pineapple juice.
- 3 Add to the pan with the pineapple chunks and bring to the boil, stirring until thickened. Simmer gently for 1 minute.
