This quick and easy spicy Cajun chicken is delicous served with a refreshing watercress and orange salad and corn on the cob.
Ingredients
  • For the chicken:

  • 1 tablespoons oil

  • 4 teaspoon Cajun Seasoning

  • 450 gram (1 pound) chicken mini fillets

  • For the corn on the cob:

  • 8 mini corn on the cobs

  • 1 tablespoons oil

  • To garnish:

  • pinch Mild Chilli Powder

  • pinch Coriander Leaf

  • 1 lime

  • 100 gram (4 ounce) watercress

  • 1 orange, cut into segments

Instructions

  • 1 In a large bowl, combine the oil and Perfect Shake Cajun Herb & Spice Blend. Add the chicken and mix to evenly coat. Transfer the chicken to a heated wok and stir fry for 7-10 minutes, or until cooked through.
  • 2 Garnish the corn on the cob with Chilli and Coriander Leaf and serve with the chicken.
  • 3 Delicious with a watercress and orange salad and garnished with lime wedges.
  • 4 Meanwhile, bring a medium pan of water to the boil and add the corn on the cob. Boil for 5 minutes. Remove from the pan and drizzle with the oil. Griddle or grill for a further 4 minutes, or until cooked through.
