Chicken & Coconut Curry

450 gram (1 pound) boneless, skinless chicken breasts, diced

Juice of 1 lemon

½ teaspoon Garlic Grinder

½ teaspoon Ground Ginger

1 teaspoon Fenugreek Ground

pinch Cayenne Chilli Pepper

½ teaspoon Turmeric Powder

1 teaspoon Ground Coriander

½ teaspoon Ground Cumin

2 tablespoons oil

1 medium onion, sliced

300 millilitre (½ pint) boiling water

50 gram (2 ounce) creamed coconut, crumbled

½ teaspoon Garam Masala Powder

Sea Salt, to taste

Instructions
- 1 Toss the chicken in lemon juice and the first seven spices. Heat the oil in a large pan and fry the onion until soft. Add the chicken until brown.
- 2 Stir in the water and creamed coconut and simmer for 20 minutes, uncovered. Stir in the Garam Masala and season to taste.
