  • 1 tablespoons oil

  • 1 large onion, sliced

  • 2 carrots, peeled and sliced

  • 4 skinless chicken breasts

  • 1 sachet Chicken Casserole Mix

  • 300 millilitre (½ pint) water

  1. For a perfect winter evening meal cook tender chicken breasts in this savoury sauce with herbs and onion.


  • 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
  • 2 Heat oil, soften onion and carrots. Add chicken and brown for 2-3 minutes on each side. Transfer to a casserole dish.
  • 3 Mix sachet contents with water and add to casserole dish. Cover and cook for 1 hour.
  • 4 Serve with creamy mashed potatoes.
