Sweet Chilli Chicken

1 tablespoons oil

450 gram (1 pound) boneless chicken breast, cut into strips

1 red pepper, sliced

100 gram (4 ounce) sugar snap peas

100 gram (4 ounce) broccoli

2 teaspoon Mild Chilli Powder

2 teaspoon cornflour
-
300 millilitre (½ pint) chicken stock

2 tablespoons tomato purée

2 tablespoons honey

Instructions
- 1 Heat the oil in a wok or large frying pan and fry the chicken for 5-6 minutes until browned. Add the pepper, sugar snap peas, broccoli and Mild Chilli Powder and cook for 1-2 minutes.
- 2 Blend the cornflour with the stock and add to the pan with the remaining ingredients. Bring to the boil, stirring until thickened. Simmer for 2-3 minutes.
- 3 Serve this classic Chinese stir fry with rice.
