Chicken in Tomato & Mascarpone Sauce Recipe

1 tablespoons olive oil

1 onion, finely chopped

450 gram (1 pound) boneless, skinless chicken breasts

400 gram tin chopped tomatoes

1 teaspoon Minced Garlic

1 tablespoons Dried Basil

½ teaspoon Sea Salt

3 tablespoons mascarpone

Instructions
- 1 Heat the oil and fry the onion over a gentle heat until softened but not coloured. Add the chicken and fry on both sides until golden.
- 2 Add the tomatoes, Garlic, Basil and Salt, bring to the boil, reduce heat and simmer covered for 10 minutes.
- 3 Stir in the mascarpone and simmer uncovered until the sauce has slightly thickened and the chicken is cooked through. Serve with Pasta.
