  • 2 teaspoon Coriander Leaf

  • Zest and juice of 1 lemon

  • 1 teaspoon caster sugar

  • 2 tablespoons light soy sauce

  • 4 x 225 gram (8 ounce) skinless, boneless chicken breasts

  • 3 teaspoon Thai 7 Spice

  • Lemon wedges and rind to garnish

  • 1 In a non-metalic dish mix together the Coriander Leaf, lemon juice and zest, caster sugar and soy sauce. Coat the chicken in the marinade and cover and refrigerate for 15 minutes.
  • 2 Pre-heat the grill and cook the chicken under a medium heat for 20 minutes, turning occasionally.
  • 3 Serve the chicken with rice and pan fried courgettes. Garnish with lemon wedges and rind.
