Creamy Chicken and Basil Linguine

450 gram (1 pound) boneless, skinless chicken breasts, diced

175 gram (6 ounce) broccoli florets, bite-size

300 millilitre (½ pint) milk

275 gram (10 ounce) linguini, cooked according to pack instructions and drained

175 gram (6 ounce) cherry tomatoes, halved

25 gram (1 ounce) Parmesan cheese, grated
- Try replacing the chicken with 450g diced, skinless salmon fillets. Sauté broccoli until tender, mix sachet contents with milk and add to pan with salmon, bring to a simmer and add remaining ingredients. Cover and cook for 5 minutes, or until salmon is cooked through.
Instructions
- 1 Heat oil, add chicken and broccoli, cover and sauté for 8-10 minutes until chicken is cooked through.
- 2 Mix sachet contents with milk, add to pan and heat through until it begins to simmer. Stir in linguine, tomatoes and cheese.
- 3 Cook for 2-3 minutes until heated through. Add a splash of pasta water if sauce seems a little thick.
- 4 Serve immediately with garlic bread and salad. Garnish with shavings of Parmesan.
