  • 1 Slash the chicken making deep cuts into the flesh.
  • 2 In a shallow dish, mix the remaining ingredients. Add the chicken and coat in the mixture. Cover and refrigerate for 1 hour.
  • 3 Place under a pre-heated grill for 15-20 minutes, turning occasionally.
  • 4 Serve with boiled new potatoes, tossed in butter and parsley and seared courgettes. Garnish with lime wedges if you wish.
