Blended to perfection, with slowly roasted spices for a fuller flavour, this recipe mix will take all the family on an exciting and flavourful journey. A spicy dish of chicken, sweet potato and pineapple chunks.
Ingredients
  • 1 tablespoons olive oil

  • 1 onion, chopped

  • 4 boneless, skinless chicken breasts

  • 4 teaspoon Jerk Seasoning

  • ½ teaspoon Dried Thyme

  • ¼ teaspoon Cumin Seeds

  • 1 green pepper, diced

  • 350 gram (12 ounce) sweet potato, peeled and diced

  • Zest and juice of 1 lemon

  • 3 tablespoons tomato purée

  • 425 gram tin pineapple chunks in natural juice

  • 125 millilitre (4 fluid ounce) water

Instructions

  • 1 Heat the oil in a large frying pan and fry the onions for 1-2 minutes.
  • 2 Add the chicken and cook for 2-3 minutes on each side.
  • 3 Sprinkle in the Perfect Shake Jamaican Jerk Herb & Spice Blend, then add the remaining ingredients, including the pineapple juice, but reserving the pineapple pieces. Bring to the boil, stirring.
  • 4 Cover the pan, turn down the heat, and leave to simmer for 25 minutes or until the potatoes are tender and the sauce has thickened. Stir in the pineapple pieces and heat through, uncovered, for 5 minutes.
