Mexican Chicken Wrap with Guacamole

1 sachet Mexican Seasoning

1 tablespoon oil

325 grams (11 ounces) chicken breast, sliced

2 ripe avocados, roughly chopped

100 grams (4 ounces) round lettuce, shredded

100 grams (4 ounces) medium tomato, deseeded and diced

75 grams (3 ounces) roasted red peppers, sliced

4 tortilla wraps

Roasted red peppers are available from supermarkets in jars.
Instructions
- 1 Combine half of the Mexican Street Food Seasoning with the oil in a bowl, add the chicken and stir to coat. Meanwhile pre-heat a griddle pan over a medium-high heat.
- 2 In a second bowl combine the avocados along with half of the Mexican Street Food Seasoning and the tomatoes.
- 3 Griddle the wrap until black char marks are formed. Remove and add the chicken, cook for 3-4 minutes on each side, or until cooked through.
- 4 Spread the guacamole down the centre of the tortillas wraps and arrange the roasted red peppers, lettuce and chicken on top, roll up the wrap and serve cut in half.
