  • 150 millilitre (1/4 pint) olive oil

  • 2 tablespoons lemon juice

  • 4 teaspoon Piri Piri Seasoning

  • 8 chicken drumsticks, skinned

  • 1 Place the marinade ingredients in a bowl and mix together. Score the chicken using a sharp knife, pour over the marinade, cover and refrigerate for 2 hours or overnight.
  • 2 Cook the chicken pieces under a pre-heated grill for 25-30 minutes, turning occasionally and basting with any remaining marinade throughout the cooking.
  • 3 Serve hot with a mixed salad or fresh vegetables.
  • 4 Also suitable for barbecuing.
