  • Southern Fried Chicken:

  • 4 tablespoons Southern Fried Chicken

  • 2 tablespoons vegetable oil

  • 8 chicken drumsticks

  • Slaw:

  • 2 corn cobs, husks and fibres removed

  • 25 grams mayonnaise

  • 1 tablespoon apple cider vinegar

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon each, salt and pepper

  • 175 grams shredded cabbage

  • 1/2 carrot, shredded

  • 2 spring onions, thinly sliced

Cooking tip
  1. Substitute chicken drumsticks with bone-in thighs or breast.

Instructions

  • 1 Southern Fried Chicken: Preheat oven to 180˚C, 350°F, Gas Mark 4.
  • 2 Mix the Southern Fried Seasoning with the oil in a large bowl. Add the chicken drumsticks and coat well.
  • 3 Place the chicken drumsticks onto a baking tray, and cook for 45 minutes, or until chicken is cooked through.
  • 4 Slaw: Meanwhile, cook the corn in boiling salted water for 5-6 minutes or until tender.
  • 5 Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.
  • 6 Serve the chicken with the slaw and corn.
