Southern Fried Chicken with Slaw

Southern Fried Chicken:

4 tablespoons Southern Fried Chicken

2 tablespoons vegetable oil

8 chicken drumsticks

Slaw:
-
2 corn cobs, husks and fibres removed

25 grams mayonnaise
-
1 tablespoon apple cider vinegar
-
2 teaspoons Dijon mustard
-
1/2 teaspoon each, salt and pepper

175 grams shredded cabbage
-
1/2 carrot, shredded
-
2 spring onions, thinly sliced
Key Products
- Substitute chicken drumsticks with bone-in thighs or breast.
Instructions
- 1 Southern Fried Chicken: Preheat oven to 180˚C, 350°F, Gas Mark 4.
- 2 Mix the Southern Fried Seasoning with the oil in a large bowl. Add the chicken drumsticks and coat well.
- 3 Place the chicken drumsticks onto a baking tray, and cook for 45 minutes, or until chicken is cooked through.
- 4 Slaw: Meanwhile, cook the corn in boiling salted water for 5-6 minutes or until tender.
- 5 Whisk together the mayonnaise, vinegar, mustard, salt and pepper. Toss the cabbage, carrots, spring onions with dressing until well coated.
- 6 Serve the chicken with the slaw and corn.
