Tray-baked Piri Piri Chicken

4 chicken thighs, boneless, skinless

2 tablespoons olive oil

1 lime, zest and juice

1 1/2 tablespoons Piri Piri Seasoning

1 large red onion, cut into wedges

1 red pepper, cut into strips

1 yellow pepper, cut into strips

450 grams (1 bag) sweet potatoes, cut into wedges

200 grams (7 ounces) pack of tender stem broccoli

Instructions
- 1 Marinate the chicken thighs with 1 tbs olive oil, Piri Piri Seasoning, zest and juice of a lime. Cover and set aside for 30 minutes at room temperature or overnight in the refrigerator.
- 2 Pre-heat the oven to 180゜C, 350゜F, Gas Mark 4.
- 3 Add the vegetables to a large baking tray and place the chicken thighs on top, spreading out evenly.
- 4 Cook in the oven for 40-45 minutes, until the chicken is cooked through and the juices run clear.
- 5 Serve with a side salad.
