Chocolate and Orange Sponge
Ingredients

25 gram (1 ounce) margarine or softened butter

1 medium egg

25 gram (1 ounce) caster sugar

25 gram (1 ounce) self-raising flour

1 tablespoons cocoa powder

1/4 teaspoon baking powder

1/4 teaspoon Ground Allspice

1/4 teaspoon Cinnamon Ground

Zest and juice of 1 orange

For the Sauce:

1 tablespoons cocoa powder

25 gram (1 ounce) soft brown sugar

50 millilitre (2 fluid ounce) water

Remaining orange juice

Instructions
- 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
- 2 Whisk together the margarine, egg, caster sugar, flour, 1 tbsp cocoa powder, baking powder, Spices, orange zest and 1 tbs orange juice. Mix until smooth and glossy. Divide the mixture evenly into 2 ramekins.
- 3 Pour the remaining orange juice, water, cocoa powder and brown sugar in a small saucepan. Bring to the boil, stirring continuously. Pour evenly over the 2 sponge mixtures and bake for 20 minutes until risen and firm.
