Fizzy Fireworks Cocktail

200 grams (7 ounces) caster sugar

300 millilitres (1/2 pint) cranberry juice

1 Clementine thinly sliced

325 millilitres (11 fluid ounce) gin

175 millilitres (6 fluid ounce) triple sec

500 millilitres (17 fluid ounce) soda water

500 millilitre (17 fluid ounce) Prosecco

- 1 Combine the sugar, cranberry juice, Peppercorns, Cinnamon, Star Anise in a pan. Heat gently until the sugar has dissolved. Bring to a gentle boil then take off the heat and leave to cool.
- 2 Infuse in fridge for 2-3 hours.
- 3 Strain into a large serving bowl or jug.
- 4 Add slices of Clementine, gin and triple sec.
- 5 Add Prosecco and soda water and mix well.
- 6 Allow to infuse for 5 minutes before serving.
