Aromatic King Prawn Stir Fry

175 gram (6 ounce) shiitake mushrooms

1 tablespoons Sesame Seed

1 tablespoons Coriander Leaf

pinch Chilli Flakes

½ teaspoon Szechuan Peppercorn

½ teaspoon Ground Ginger

¼ teaspoon Cinnamon Ground

1 tablespoons Shaoxing rice wine (or dry sherry)

1½ tablespoons light soy sauce

1 tablespoons tomato purée

2 tablespoons water

250 gram (9 ounce) raw King prawns, tail on

1 tablespoons oil

200 gram (7 ounce) pak choi, stalks separated from the leaves and sliced

Instructions
- 1 In a pestle and mortar grind the Star Anise and Szechuan Pepper into a fine powder. Add the Ginger, Cinnamon, rice wine, soy sauce, tomato purée and water. Mix well.
- 2 Add the King prawns and coat in the marinade.
- 3 Heat the oil in a wok, add the prawns and the marinade and stir fry for 2 minutes until they turn pink. Add the pak choi, shiitake mushrooms, Sesame Seeds, Coriander Leaf and Crushed Chillies and stir fry for a further 2 minutes. Serve immediately.
