Cod with a Parsley and Lemon Crust

50 gram (2 ounce) butter

1 small onion, finely chopped

4 teaspoon Flat Leaf Parsley

75 gram (3 ounce) fresh breadcrumbs

Zest and juice of 1 lemon

Salt and pepper to taste

450 gram (1 pound) cod fillet

Instructions
- 1 Prre-heat the oven to 180°C, 350°F, Gas Mark 4.
- 2 Melt the butter in a frying pan and fry the onion and Parsley for 3-4 minutes. Stir in the breadcrumbs, lemon zest and juice and fry for 2-3 minutes. Season to taste.
- 3 Divide the fish into 4 portions and place on a baking sheet. Divide the breadcrumb mixture into 4 and use to top the fish. Bake for 20-25 minutes.
