Chargrilled swordfish steaks flavoured with Cajun spices, served with a tangy tomato salsa flavoured with a Spicy Italian Herb & Spice Blend.
Ingredients
  • 4 x 175 gram (6 ounce) swordfish steaks, wiped

  • 4 teaspoon Cajun Seasoning

  • olive oil to drizzle

  • few mixed salad leaves

  • 5 tomatoes, diced

  • ½ onion, diced

  • 3 tablespoons olive oil

  • lime wedges to garnish

  • 1 tablespoons red wine vinegar

  • 1 tablespoons Spicy Italian Seasoning

Instructions

  • 1 In a bowl, mix together the tomatoes and onion. Drizzle over the olive oil and red wine vinegar and stir in the Spicy Italian Seasoning. Toss and leave to one side whilst you prepare the fish.
  • 2 Sprinkle the swordish steaks with the Cajun Seasoning. Heat a griddle and drizzle the fish with oil. Sear for 7 minutes, turning once.
  • 3 Serve the fish on a bed of salad leaves with the salsa and a few wedges of lime.
