Tasty grilled prawns marinated in orange juice and garlic, served with a tangy Asian pesto combining almonds, Coriander Leaf and Ginger. Delicious with crusty bread, serves 4 as a main course or 8 as a starter.
  • For the Prawns:

  • 75 millilitre (3 fluid ounce) orange juice

  • 2 teaspoon Ground Ginger

  • 1 teaspoon olive oil

  • ½ teaspoon Garlic Granules

  • ¼ teaspoon Sea Salt

  • 450 gram (1 pound) large raw prawns, peeled and de-veined

  • For the Asian Pesto:

  • 2 tablespoons toasted slivered almonds

  • 2 tablespoons Coriander Leaf

  • 2 tablespoons orange juice

  • 1 tablespoons olive oil

  • 1 tablespoons jalapeno pepper, chopped and de-seeded

  • ¼ teaspoon Ground Ginger

  • pinch Sea Salt

  • 1 Mix the orange juice, Ginger, oil, Garlic Granules and Salt in a medium bowl. Add the prawns and toss to coat well. Cover and leave to marinade for 20 minutes.
  • 2 Meanwhile, for the Pesto, finely chop the almonds in a fod processor. Add the remaining ingredients, cover and process again until the mixture is coarsely chopped. Set aside.
  • 3 Place the prawns on an oiled grill pan. Grill on a medium-heat for 4-6 minutes or until the prawns turn pink, turning occasionally. Serve the prawns with the Asian Pesto.
