Minty Prawn & Apple Salad
Ingredients

1/2 teaspoon Mint Herb

225 gram (8 ounce) cooked, peeled prawns

2 eating apples

Few drops of lemon juice

Paprika , - to garnish

1 teaspoon tomato purée

3 tablespoons natural yoghurt

3 tablespoons mayonnaise

Instructions
- 1 Combine the yoghurt, mayonnaise, tomato purée, Mint and Pepper in a bowl and stir in the prawns.
- 2 Just before serving, core and slice the apples. Sprinkle with a little lemon juice to prevent browning.
- 3 Arrange the apple slices on a serving plate and spoon over the prawns. Sprinkle with Paprika and serve immediately.
