When it’s cold and grey outside, try this fresh and fruity twist on the classic prawn cocktail at your Christmas do. With sweet, vibrant mango and plump prawns served with a spicy kick of Schwartz Chilli Powder and Cajun Seasoning are sure to liven up the party, and your senses!

  • 1 mango ripe, diced into 5mm cubes

  • 1/2 cucumber, deseeded and finely chopped

  • 1/2 small red onion, finely chopped

  • 125 grams (5 ounces) mayonnaise

  • 1 tablespoon Cajun Seasoning

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon Mild Chilli Powder

  • 8 iceberg lettuce leaves

  • 12 (about 250 grams or 9 ounces) cooked large king prawns, peeled

  • Lemon wedges, to serve

Instructions

  • 1 Combine mango with cucumber and onion in a medium bowl.
  • 2 Whisk together the mayonnaise, lemon juice, Cajun Seasoning, and Chilli Powder in a bowl.
  • 3 Line each serving glass with 1 lettuce leaf.
  • 4 Finely shred the remaining lettuce leaves and divide among the glasses.
  • 5 Top with the mango mixture and prawns.
  • 6 Drizzle over the mayonnaise mixture. Serve with lemon wedges.
