Salmon & Broccoli Quiche

225 gram (8 ounce) shortcrust pastry

2 medium eggs, beaten

300 millilitre (1/2 pint) cheese sauce

1 teaspoon Tarragon

418 gram (14 ounce) tin salmon or tuna, drained

Salt and Pepper to taste

75 gram (3 ounce) broccoli florets, blanched

Instructions
- 1 Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
- 2 Roll out the pastry and line a 20.5cm (8") flan ring. Chill. Bake blind for 15 minutes.
- 3 Meanwhile, blend eggs into the sauce, stir in Tarragon, salmon and seasoning. Arrange broccoli over pastry case and pour over the sauce. Cook for 40-45 minutes or until golden and set.
