Thai Prawn Curry

400 millilitre (13 fluid ounce) coconut milk

2 tablespoons tomato purée

2 tablespoons Thai 7 Spice

2 teaspoon Coriander Leaf

1 tablespoons lemon juice

200 gram (7 ounce) French beans, halved

4 tomatoes, diced

450 gram (1 pound) cooked prawns, defrosted if frozen

Instructions
- 1 STEP 1: Place the coconut milk, tomato purée, Thai 7 Spice, Coriander Leaf and lemon juice in a wok or large frying pan and bring to the boil, stirring continuously.
- 2 STEP 2: Add the beans and tomatoes and simmer for 4-5 minutes or until the beans are tender. Stir in the prawns and heat through for a further minute.
- 3 STEP 3: Serve with rice.
