  • 1 tbs oil

  • 175 gram (6 ounce) potato, cooked and diced

  • 1 large courgette, sliced

  • 5 medium eggs

  • 2 tablespoons water

  • 2 teaspoon Fish Seasoning

  • Salt and Ground White Pepper

  • 200 gram (7 ounce) tin tuna, drained

  • 50 gram (2 ounce) Cheddar cheese, grated

  • 1 Heat the oil in a medium frying pan and fry the potato and courgette for 2-3 minutes.
  • 2 Beat the eggs together with the water, Fish Seasoning, salt and Pepper and pour into the frying pan. Cook over a medium heat until the egg mixture is just beginning to set. Scatter over the tuna and cook for a further 1 minute or until the tortilla is golden brown underneath.
  • 3 Sprinkle the cheese on top and place under a pre-heated grill until golden brown.
