Tuna & Courgette Tortilla

1 tbs oil

175 gram (6 ounce) potato, cooked and diced

1 large courgette, sliced

5 medium eggs

2 tablespoons water

2 teaspoon Fish Seasoning

Salt and Ground White Pepper

200 gram (7 ounce) tin tuna, drained

50 gram (2 ounce) Cheddar cheese, grated

Instructions
- 1 Heat the oil in a medium frying pan and fry the potato and courgette for 2-3 minutes.
- 2 Beat the eggs together with the water, Fish Seasoning, salt and Pepper and pour into the frying pan. Cook over a medium heat until the egg mixture is just beginning to set. Scatter over the tuna and cook for a further 1 minute or until the tortilla is golden brown underneath.
- 3 Sprinkle the cheese on top and place under a pre-heated grill until golden brown.
