Ingredients
  • 1 sachet Grill Mates Mojito Lime Marinade Mix

  • 50 millilitre (2 fluid ounce) oil

  • 50 millilitre (2 fluid ounce) white rum

  • 2 tablespoons white wine vinegar

  • 400 gram (12 ounce) King prawns, deveined, heads and shells removed

  • 1 red pepper, cut into chunks

  • 1 yellow pepper, cut into chunks

  • lime wedges to garnish

Instructions

  • 1 In a large bowl combine the Mojito Lime Marinade Mix with the oil, rum and white wine vinegar. Set aside 2 tbs of marinade for basting then add the King prawns along with the red and yellow peppers.
  • 2 Toss the ingredients in the marinade to evenly coat, then cover and allow to marinate for 15 minutes. Thread prawns and peppers onto skewers.
  • 3 Cook on the BBQ for around 5 minutes, turning occasionally and basting with the reserved marinade, until the prawns have turned pink.
  • 4 Serve on a sharing platter with lime wedges to squeeze over prawns.
