Moroccan Lamb Tagine
Ingredients

1 tablespoons olive oil

1 onion, sliced

450 gram (1 pound) lamb, diced

1 1/2 tablespoons Moroccan Spice Mix

200 gram (7 ounce) tin chopped tomatoes

300 millilitre (½ pint) water

50 gram (2 ounce) dried apricots and/or sultanas

1 tablespoons honey

Instructions
- 1 Heat the oil in the tagine base over a medium heat and fry the onion for 3-4 minutes until softened. Add the lamb and cook for 4-5 minutes.
- 2 Add the remaining ingredients. Bring to a gentle simmer.
- 3 Reduce the heat to low, cover with the tagine lid and cook very gently on the stove top for 1 hour 15 minutes, or until lamb is tender, stirring occasionally.
