"Pulled" Leftover Turkey Nachos
Ingredients

450 grams leftover roast turkey meat, shredded

juice of 3 limes

2 tablespoon vegetable oil

2 Tin (800 grams) black beans, rinsed and drained

50 millilitre water

1 tablespoon Mild Chilli Powder

1 sachet Chicken Fajita Seasoning

175 grams (6 ounces) corn tortilla chips

250 grams (9 ounces) grated cheddar cheese

2 tablespoons Coriander Leaf

200 grams (7 ounces) sour cream

Instructions
- 1 Preheat oven to 180°C, 350°F, Gas Mark 4
- 2 Toss the turkey with juice of 1 lime and season with salt and pepper.
- 3 Heat the oil in a pan over moderate heat and cook the beans, Chilli, Fajitas Recipe Mix, remaining lime juice and water and cook, stirring, until heated through - about 1 minute. Season with salt and pepper.
- 4 In a shallow baking pan layer corn chips, beans, turkey, cheese, and Coriander Leaf. Sprinkle a layer of cheese on top.
- 5 Bake nachos until cheese is melted - approx. 10 minutes.
- 6 Remove from oven.
- 7 Serve with sour cream on the side.
- 8
