Cajun Puffed Lotus Seed Snack Mix

1/4 teaspoon sea salt

1/2 teaspoon Hot Chilli Powder

1/4 teaspoon Garlic Granules

1/4 teaspoon Ground Cumin

1/4 teaspoon Smoked Paprika

15 grams (1/2 ounce) puffed lotus seeds

25 grams (1 ounce) pretzel sticks

25 grams (1 ounce) toasted coconut chips

50 gram (2 ounces) unsalted raw almonds

50 grams (2 ounces) unsalted raw pistachios

2 tablespoons sunflower oil

Instructions
- 1 Pre-heat oven to 180°C, 350°F Gas Mark 4. Mix salt and spices in small bowl then set aside. Mix lotus seeds, pretzel sticks, coconut chips, almonds and pistachios in large bowl. Drizzle with oil and toss to combine. Add the spice mixture and toss to coat well.
- 2 Spread mixture evenly on large shallow foil-lined baking sheet.
- 3 Bake 15 minutes or until fragrant, stirring every 5 minutes. Cool completely on wire rack and store in airtight container.
