A mild coconut rice flavoured with Bay Leaves and Caraway Seed.

225 gram (8 ounce) basmati rice

100 gram (4 ounce) creamed coconut

½ teaspoon Sea Salt

1 teaspoon Caraway Seeds

Instructions
- 1 Rinse the rice thoroughly in cold running water. Place in a large pan of boiling water with the Salt, Caraway Seeds, Bay Leaf and creamed coconut.
- 2 Cook, uncovered, for 12-14 minutes or until the rice is tender.
- 3 Drain and rinse in a sieve with boiling water before serving. A mild accompaniment to Asian dishes.
- 4 Serve with lemon wedges and garnish with chilli.
