Creamy Leek & Mustard Sausages

450 gram (1 pound) sausages

325 gram (11 ounce) leeks

2 teaspoon olive oil

15 gram (½ ounce) butter

200 millilitre (7 fluid ounce) creme fraiche

25 gram (1 ounce) wholgrain mustard

1 tablespoons Flat Leaf Parsley

¼ teaspoon Sea Salt

¼ teaspoon Black and Red Pepper

splash white wine (optional)

Instructions
- 1 Brown the sausages in a pan on a low heat for around 10 minutes, drain fat, remove and set aside.
- 2 Add leeks and butter and fry until softened.
- 3 Return sausages to the pan, stir in remaining ingredients and simmer gently for 3-4 minutes then serve.
