A delicious Hanovarian Bacon Hotpot flavoured with Bouquet Garni and a hint of Black Pepper.
Ingredients
  • 450 gram (1 pound) smoked back bacon, chopped

  • 450 gram (1 pound) potatoes, diced

  • 225 gram (8 ounce) carrots, sliced

  • 2 tablespoons oil

  • 600 millilitre (1 pint) chicken stock

  • 1 Bouquet Garni

  • 1 teaspoon Dried Dill

  • ¼ teaspoon Ground Black Pepper

  • 225 gram (8 ounce) runner beans

  • 225 gram (8 ounce) broad beans

  • 1 large cooking apple, sliced

  • 2 teaspoon cornflour and 1tbs cold water blended to form a paste

Instructions

  • 1 Heat the oil in a large frying pan and fry the bacon, potatoes and carrots until just beginning to colour.
  • 2 Stir in the stock, Bouquet Garni, Dill and Pepper. Bring to the boil, cover and simmer for 15 minutes.
  • 3 Stir in the beans, cooking apple and cornflour paste. Cover and cook for a further 15 minutes.
  • 4 Remove Bouquet Garni. Serve with crusty bread and extra vegetables.
