Jamaican Jerk Pork

1.3 kilogram (2lb 12 ounce) joint of rolled leg of pork

1 tablespoons olive oil

4 teaspoon Jerk Seasoning

2 sweet potatoes, peeled and cut into chunks

2 parsnips, peeled and cut into chunks

300 millilitre (½ pint) chicken or pork stock

Instructions
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Brush the pork joint with the oil and rub the Perfect Shake Jamaican Jerk Special Blend over the joint.
- 2 Arrange the vegetables in a roasting tin and top with the joint. Pour over the stock and cover loosely with foil. Roast for 1 hour 30 minutes, removing the foil after 45 minutes.
- 3 Serve the pork and roasted vegetables with the pan juices and seasonal green vegetables.
