Pork & American Style Beans

2 tablespoons tomato purée

1 teaspoon Garlic Cooking Paste, or 1 clove garlic, crushed

2 tablespoons Classic Barbecue

1 red onion, sliced

400 millilitre (13 fluid ounce) chicken stock

Sea Sal, and Black Pepper to season

350 gram (12 ounce) belly pork

2 tins butter beans, drained

2 tablespoons dark brown molasses sugar

2 tablespoons black treacle

- 1 Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
- 2 Score across the skin of the pork belly with a sharp knife, season generously with Salt and Pepper and place in the oven for 35 – 40 minutes until the skin begins to puff up and crisp.
- 3 Meanwhile, combine all of the remaining ingredients in a shallow, ovenproof dish. Sit the pork on top then cover the bean mixture loosely with foil, leaving the pork uncovered to allow it to continue to crisp.
- 4 Reduce the oven temperature to 170°C, 325°F, Gas Mark 3 and cook for 1 hour 45 minutes. The pork should be tender and crispy on top. Divide the pork into 4 and serve with the beans.
