Sausage, Greens and Beans Casserole

450 grams sausages

1 onion, sliced

2 tablespoons tomato puree

175 grams mushrooms, sliced

150 grams baby spinach

100 grain cherry tomatoes

400 grain tin of chickpeas, drained and rinsed

300 millilitres cold water

1 sachet Sausage Casserole Recipe Mix

Instructions
- 1 Pre-heat oven to 180°C, 160°C fan, Gas Mark 4.
- 2 Fry the sausages for 4-5 minutes, until browned. Drain any excess liquid. Add the onion and cook for a further 3-4 minutes, until softened. Stir in the tomato puree and cook for a further minute.
- 3 Transfer to a casserole dish and add the mushrooms, baby spinach, cherry tomatoes and chickpeas. Mix the sachet contents with water and add to the casserole dish. Cover and cook in the oven for 1 hour.
- 4 Serve with mashed potatoes and seasonal vegetables.
