Exotic Express Ginger Marinade

1 teaspoon Ground Ginger

½ teaspoon Medium Curry Powder

3 tablespoons lemon juice

1 teaspoon Flat Leaf Parsley

¼ teaspoon Sea Salt

¼ teaspoon Ground Black Pepper

200 gram (7 ounce) natural yoghurt

450 gram (1 pound) boneless, skinless chicken breasts, diced

Instructions
- 1 In a bowl combine the Ginger, Curry Powder, lemon juice, Parsley, Salt and Pepper with the yoghurt.
- 2 Add the chicken, cover and leave to marinate for 30 minutes or for best results overnight in the refrigerator.
- 3 Pre-heat the grill to medium-heat and grill the chicken for 15-20 minutes, or until cooked through, turning regularly.
