Garlic Italian Pasta Sauce

A classic Italian pasta sauce with tomatoes, herbs and garlic.
  • 1 tablespoons olive oil

  • 1 onion, chopped

  • 400 gram tin of tomatoes

  • 4 tablespoons Garlic Italian Seasoning

  • 2 tablespoons tomato puree

  • 150 millilitre (1/4 pint) chicken stock or water

  • 100 gram (4 ounce) pitted olives, halved

  • 1 teaspoon sugar

  • 2 tablespoons red wine, optional

  • 1 Heat the oil and fry the onion until softened.
  • 2 Add the remaining ingredients and bring to the boil. Cover and simmer for 15-20 minutes until thickened and reduced.
  • 3 Serve tossed into cooked pasta and sprinkle with Parmesan cheese if you wish.
