Curried Vegetable Soup

1 tablespoons Mild Curry Powder

½ teaspoon Ground Ginger

125 millilitre (4 fluid ounce) double cream / 2tbs crème fraiche (France)

1 tablespoons oil

Sea Salt, and

Instructions
- 1 Heat a small frying pan on a medium heat, add the mild curry powder and ginger. Warm through for 30 seconds so the spices begin to release their aromatics, then add the rustic country soup.
- 2 Heat through to a simmer and add the cream. / crème fraiche.
- 3 Carefully transfer to a blender and blend to a smooth soup. Season to taste with salt and pepper.
- 4 Serve the soup in warm bowls with a drizzle of olive oil.
