  • 450 gram (1 pound) potatoes, peeled and diced

  • 2 tablespoons oil

  • 1 onion, diced

  • 1 sachet Bombay Potatoes Mix

  • 4 tablespoons water

  • 400 gram tin chopped tomatoes

Instructions

  • 1 Par-boil potatoes in water for 10 minutes. Drain and set aside.
  • 2 Meanwhile, heat oil and brown onion for 3-4 minutes. Add sachet contents and cook gently for 1 minute, stirring.
  • 3 Add potatoes, water and tomatoes, stir thoroughly. Cover and simmer for a further 10 minutes or until potatoes are cooked.
  • 4 Serve with naan bread and mango chutney.
