A delicately flavoured risotto combining Garlic, Basil, courgettes, carrots, mushrooms and ham for a quick and easy meal.
Ingredients
  • 3 medium onions, sliced

  • 100 gram (4 ounce) butter

  • 1 carrot, sliced

  • 1 courgette, diagonally sliced

  • 100 gram (4 ounce) button mushrooms, sliced

  • 1 tablespoons Garlic Italian Seasoning

  • 2 teaspoon Dried Basil

  • 150 millilitre (¼ pint) dry white wine

  • 350 gram (12 ounce) risotto rice

  • 1.2 litres hot chicken stock

  • 175 gram (6 ounce) lean ham, cut into chunks

  • Schwartz Sea Salt and Black Pepper to season

Instructions

  • 1 Fry the onions in the butter for 2 minutes. Add the carrots and cook for a further minute, add the courgettes and mushrooms and fry for 2 minutes.
  • 2 Add the Garlic Italian Seasoning and Basil, stir and then add the wine and cook on high for 2 minutes.
  • 3 Add the rice, stir and cook for 1 minute, add the stock and bring to the boil, then simmer gently for 15 minutes. Add the ham and heat through for 5 minutes. Season to taste and serve.
