  • 25 gram (1 ounce) ghee or unsalted butter

  • 1 tablespoons Medium Curry Powder

  • 2 cloves garlic, crushed

  • 3 tablespoons water

  • 450 gram (1 pound) button mushrooms, cleaned

  • 2 spring onions, chopped

  • 1 teaspoon Coriander Leaf

  • 1 teaspoon Sesame Seed , , toasted

  • ¼ teaspoon Sea Salt

Instructions

  • 1 Heat the ghee or butter in a frying pan, add the Curry Powder and garlic and cook gently for 1 minute. Stir in the water.
  • 2 Add all the remaining ingredients and cook over a moderate heat, stirring continuously, for 1-2 minutes, or until the mushrooms are just tender. Do not allow to overcook.
  • 3 Serve as a starter or as an accompaniment in any Indian meal.
