  • 4 red peppers, halved lengthways

  • 125 gram (5 ounce) bag mozzarella cheese, diced

  • 1 small avocado, diced

  • 1 tomato, chopped

  • 1 tablespoons mango chutney

  • 1 teaspoon Herbes de Provence

  • ½ teaspoon Garlic Granules

  • 2 tablespoons olive oil

Instructions

  • 1 Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
  • 2 Place the peppers on a baking tray and bake for 10 minutes.
  • 3 Blend all the remaining ingredient together in a bowl. Remove the peppers from the oven and fill with the avocado mixture, bake for a further 10 minutes or until the cheese is beginning to melt and the peppers are tender.
