Quesadilla

200 gram (7 ounce) grated mozzarella cheese

4 spring onions, finely chopped

1 teaspoon Chilli Flakes

3 tablespoons Chives

4 large flour tortillas

25 gram (1 ounce) butter, melted

Instructions
- 1 In a bowl mix together the cheese, spring onions, Chillies and half the Chives.
- 2 Sandwich ½ the filling between two tortillas and then brush the top with ¼ of the butter. Repeat with the other two tortillas.
- 3 Heat a large non-stick frying pan and flip the tortilla into the pan on the buttered side and push down with your hand. Place a plate on top and cook for 3 minutes.
- 4 Remove the lid and brush the top of the tortilla with ½ of the remaining butter. Turn the tortilla in the pan and cook on the second side. Repeat for the other tortilla. Serve cut into wedges with Chives.
