Spiced Potatoes & Spinach

450 gram (1 pound) baby potatoes, halved

1 onion, chopped

2 tablespoons Medium Curry Powder

225 gram (8 ounce) baby spinach

Schwartz Sea Salt and Black Pepper to season

- 1 Par-boil the potatoes for 5 minutes, until just tender.
- 2 Meanwhile, heat the oil and fry the onion, over a gentle heat, until softened and browned.
- 3 Add the Medium Curry Powder and fry for 1 minute. Add the potatoes and spinach, and cook for about 5 minutes until cooked through. Season to taste.
